Protein in liver contains the same amount as in beef, but in qualitative terms this protein is significantly different. The main feature of liver is the presence in its composition of iron proteins. The main liver iron-protein ferritin contains more than 20% of iron. It plays an important role in the formation of hemoglobin and other blood pigments. There is a lot of water in liver, so it spoils quickly. Before cooking it should be carefully inspected, everything that causes disbelief should be mercilessly destroyed. The liver will be especially tender if, before cooking it for a while in milk. An extra two or three minutes of frying beef liver spoils the taste and makes it tough and dry.
