Leeks are distinguished by a high content of potassium, calcium, iron, phosphorus, sulfur, magnesium salts. The plant contains an essential oil, which includes sulfur, proteins, vitamins – ascorbic and niacin, thiamine, riboflavin, carotene. Leek has a valuable property that no other vegetable crops have: during storage, the amount of ascorbic acid in the bleached part increases by more than one and a half times.
