Pistachios: calories, carbs, fats and other nutrients


Pistachios are an excellent source of copper, manganese and vitamin B6 as well as protein, dietary fiber, thiamine and phosphorus. In addition, pistachios are high in polyphenol antioxidants and only the nuts contain significant amounts of lutein and zeaxanthin. Scientists at the University of Toronto found that a handful of pistachios, eaten with foods with a high glycemic index (white bread, for example) reduces blood sugar levels and “hunger hormones”. Thus, pistachios regulate appetite, which is great news for diabetics.
