Salmon meat contains a lot of fat, but mainly unsaturated fatty acids, which have a favorable effect on blood fat content. Salmon is rich in potassium and phosphorus, it also contains calcium, magnesium, chlorine, iron, zinc, chrome, fluorine, molybdenum, nickel, vitamin B1, B2, C, E, PP and A. Salmon roe contains about 30% of high value proteins, which is rare for animal proteins, and 10-13% of easily digestible fats. Caviar is rich in lecithin, vitamins A, E, D and B group, phosphorus, iron and other minerals and organic compounds necessary for normal development of the body, skin cells, normalize blood pressure and increase hemoglobin. This is because the proteins of caviar are complete and mostly refer to proteins like globulins, albumin.
