Nutritional value of this product is due to the presence of easily digestible carbohydrates in the pulp of greenlings (unripe fruits). Young zucchinis have about 2-2.5% of sugars and 5-6% of dry matter. As the fruit matures, the amount of sugars increases, but the amount of carotene also increases markedly. Mature yellow-fruited zucchinis have more carotenes than carrots. In addition, the skin of such yellow zucchinis contains a lot of antioxidants lutein and zeaxanthin.
